Legumes have been a basic food for people of Abruzzo since ancient times. They are considered to be our grandparents’ real “daily bread” and their only source of protein due to the low availability of meat.

Legumes were always on our ancestors’ tables, mainly because they are easy to grow in both arid and little flat fields that are so common to be found in Abruzzo. The types of legumes available are countless. Beans, lentils, cicerchie, chickpeas, peas and lupines have never been missing in local families’ pantries. Moreover, there are plenty of autochthonous specialities characterising and exhalting our territory. The most famous local legumes are the well- known lentils from Santo Stefano di Sessanio, which are a Slow Food Presidium. These local lentils are very small and flavorful. They have ancient origins and are considered to be the finest variety of lentils in Italy.

Two more Slow Flood Presidia are: the beans from Paganica, a hamlet of L’Aquila, and chickpeas from Navelli, which are even smaller than any other variety of chickpeas commonly sold and which have a unique flavor. Legumes have always been protagonists of countless traditional recipes, such as tasty soups and many others which belong to our rural past. That is the reason why they are another pride of the region.
